Most fruit-pie games decorate after baking. This one makes you commit before, which is the correct way round and much more interesting: banana, kiwi, strawberry and pineapple are arranged on the raw base, and the oven then changes their colour and texture in ways that are hard to predict from the layout you set.
The preparation is real work. Fruit is washed, peeled and sliced individually, and the slices differ in thickness depending on how you cut them — which matters, because thin slices caramelise and thick ones stay pale.
