The rule that carries across almost all of them is to begin with whatever runs unattended. Ovens, grills and fryers keep working while you do something else; assembly does not. A level in this genre is far more often lost by leaving an oven empty than by plating a second late, which is not obvious until someone says it.
The section holds contests as well as kitchens — head-to-head rounds where the pressure comes from a rival working alongside you rather than from a countdown. They are shorter and lighter, and their pages say which is which.
